Pink Velvet Cookies

I made some easy red velvet cookies back during the holiday season and they were such a hit! I guess I’m not the only one that enjoys an easy cookie recipe? So, today I have an perfectly pink cookie recipe to share with you. Can you believe that these are pink velvet cookies? They are as sweet as can be and incredibly simple to make (high fives!).

A quick and simple recipe for Pink Velvet Cookies

For this simple pink velvet cookie recipe, you will need:

  • A box of Duncan Hines Pink Velvet Moist Cake Mix
  • 1 stick of butter (or 1/2 cup of butter)
  • 2 eggs
  • 2 tbsp. of flour

Can you believe that cookies can be made from a box of cake mix? It’s true and they are just divine. I made THESE over St. Patrick’s Day using the same technique too (drool).

1. Add all of the cake ingredients to a bowl and mix well
2. Place small and rounded spoonfuls of dough onto a lightly greased cookie sheet
3. Bake at 350 for 10-12 minutes. (Makes about 2 dozen)

The frosting that is on these pink velvet cookies is actually pretty darn cool, if I do say so myself. I recently taught you how to make cotton candy cookies with this frosting. The frosting is so quick and easy that I used that same frosting on these pink velvet cookies. Click HERE to see the frosting.
